Global was founded by Yuzo Watanabe in Japan in 1983[1].
Over the past decade the Global line has rapidly introduced many new highly specialized knife designs, including a tomato knife and a crab/lobster knife. They also make eating utensils.
In 2006, the G Series knives was placed #46 on the Japanesque Modern Committee listing.[2]
The company's products compete against high-quality household and professional use knife manufacturers, including Henckels, CHROMA Cnife, Sumikama, Wusthof and [Sabatier Lion]. Global is also tested well, i.e. in the Swedish TESTFAKTA http://www.testfakta.se/incoming/article32185.ece
Compared to conventional European knives such as J. A. Henckels or Wusthof, Global knives as most Japanese style knives are made from a significantly harder alloy of steel, use a thinner blade thickness, and can be sharpened to a more acute angle. This produces a sharper knife which keeps its edge longer and allows for more accurate work. Global recommends sharpening with a whetstone or ceramic tool rather than an electrical grinder.[3]
Global knives are renowned for their surprisingly light weight and balance. They are easily recognised by their distinctive appearance, the handle and blade being one continuous piece of metal, and having black indentations present on the handle and on one model of their storage block.
